Resident Evil - Playstation - "Jill Sandwich"
holds a special place with me because of its voice acting (1:06 = "yeah yeah")

Ninja Gaiden - NES - "Intro"
Love the music first off. But it also demonstrated that cutscenes could be pulled off quite dramatically in an NES game. The Ninja Gaiden series on the NES relied heavily on cutscenes to progress their stories, and it's one of the reasons the series became so popular.
Most NES games didn't have cutscenes at this time, especially not action games. Usually the story was written into the instruction manual or done through text-driven story segments. So the Ninja Gaiden cutscenes were important for a number of reasons.
