I've said it before I'll say it again, "TETRIS. The answer is always TETRIS."

Off the top of my head I can think of:

Tetris Gameboy
Tetris NES
Tetris Tengen NES
Tetris Worlds PS2
Tetris PS3
Tetris DS

I'm probably missing a couple, and I'm definitely not counting emulators.

I have two copies of Gauntlet: Dark Legacy for the Gamecube and PS2

I have two copies of Super Mario Bros 3, Wii and NES

Two copies of Starfox 64, Wii and N64

Four copies of Ocarina of Time, Wii, N64, and Gamecube twice.

And I have two copies of Xenoblade Chronicles and three copies of Mario's 25th anniversary edition, most of them sealed because fuck you, I will make money with it some day.
